Mixed Bean And Tomato Chilli

Great for a quick meal / Serves: 3



  • 1 fresh red chilli
  • 1 large handful of coriander
  • 2x400g tinned tomato
  • 2x400g mixed beans (drained and rinsed)


1) Thinly slice the chilli, then put into a pan. Add the tomato and mixed beans and simmer gently on a medium heat for 5mins.

2) Finely chop the fresh coriander. Set aside for the garnish and add the remainder to the tomato and bean mixture. Stir to mix all the ingredients together.

3) Bring the mixture to the boil, then reduce the heat. Stir the mixture occasionally and add some water if the sauce starts to dry out. cook for 20-30mins.
