Carrot And Orange Soup

Spicy, yummy, with simple ingredients



  • 300ml vegetable stock
  • 1 large carrot, diced
  • 1/2 onion
  • 1 clove of garlic
  • Small potato, grated
  • 100ml of orange juice
  • Salt + pepper
  • Mint (optional)


1) Boil stock, carrot, garlic and potato. Cover and simmer for 20 minutes until veg is tender

2) Stir in orange juice, seasoning and mint (haven't tried it with fresh mint but dried works fine). Simmer for 5 minutes.
