1. Bring potatoes to boil with a little salt. Boil till soft
2. In a separate pan add demerara sugar and melt on a very LOW heat.
3. When sugar is melted add 2 table spoons of orange juice.
4. Take sugar off heat, add potatoes to melted sugar. stir adding large handfull of fresh chopped corriander.
I can eat a whole bowl of these to my self. takes about 15 mins to make.
Nobody can resist this dessert its fabulous!
