Easy, filling evening meal – surprisingly cheap too

There might look like a lot of steps, but this shouldn’t take you more than 15-20 minutes as most of the steps can be done while waiting for other things to cook. Can be done without adding cream or butter at the end if you want a lighter version. Interestingly supposed to be a breakfast dish but i think it’s best for dinner/supper – especially in the winter!

begin to boil the rice.

while it’s cooking, chop and slowly cook 1/2 to whole onion depending on what you prefer and 1 garlic clove finely chopped.

place the haddock in a microwaveable bowl with some milk and butter, cover with cling film, pierce and cook on high for 5 minutes.

add peas to rice 3 minutes before it’s done and cook.

drain rice and peas, pour in with the onion and garlic then turn heat off and mix.

refill saucepan used for rice, place in 1-2 eggs and boil for 6 minutes.

remove fish from microwave, flake (break it up with your fork) and add to rice etc with salt, pepper, parsley and a little cream if you have it in, if not add a little more butter.
