Bean pasta with sour cream

Ingredients

Pasta
Tomato Sauce
Sour Cream
Butter
(Black beans optional)
(Onion salt optional)

Method

Cook the pasta on the stove until it softens
Drain
Butter the pot at the bottom so the pasta doesnt stick
Dump pasta back in and add the tomato sauce (Doesnt matter the brand)
Add garlic salt over

(Optional) On another pot boil Black Beans, non-mushed

Plate the pasta
Add around 3 dallops of Sour Cream (If you have mexican kind, even better)
(Optional) Dump black beans on top
Mix together.

And if you have home made salsa, add on top and mix together.
Enjoy!

My roommate in college, a nutrition major, used to make a variation of this recipe. I still make it sometimes, because it's good in a pinch. She just cooked the pasta, warmed up the black beans, then put them both together and added a little bit of fat free sour cream until the mixture reached the desired creaminess. I use garlic salt in it sometimes, if I'm feeling the need for sodium. :) It's not fancy, but it hits "the spot" and it's super easy. So, there you go.rn
