1/2 small tin of chopped tomatoes
1/2 small tin of butter beans
125g of minced beef
1/2 medium onion, very finely chopped
3 tsp olive oil
1 x large garlic clove, finely chopped
1/4 tsp chilli powder
1/4 tsp ground coriander
1/2 tsp mixed herbs
1/2 tsp English mustard
1/4 tsp paprika
dash Worcestershire Sauce
2 tsp vinegar

1. Preheat the oven. Heat 2 tsp oil in a frying pan and fry half the onion and ground coriander for 2-3 minutes, or until soft. Transfer to a large bowl and mix in the minced beef, mixed herbs, mustard and season generously.
2. Mould the minced beef mix into a rounded oblong shape and rub with 1 tsp oil. Wrap the meatloaf in foil, put in an ovenproof dish and bake for 30 minutes.
3. Meanwhile heat 1 tsp oil in a saucepan and fry the remaining onion with the garlic, chilli powder and paprika. Cook for 2-3 minutes, stirring occasionally, then add the Worcestershire sauce, butter beans, chopped tomatoes and vinegar and simmer for 10 minutes. Taste the sauce at this stage and adjust the seasoning if necessary.
4. To serve simply cut the meatloaf into thick slices and spoon the sauce over.
This is a well balanced hearty meal made substantial by the butter beans in the sauce. You can further bulk it up by serving it with crusty bread.
